1 cup (200 g) granulated sugar

½ cup (100 g) light brown sugar

1¾ cups (220 g) all-purpose flour

1 teaspoon baking soda

¾ teaspoon salt

2 teaspoons pumpkin pie spice

Wet Ingredients:

¾ cup (180 g) canned pumpkin puree

2 large eggs, beaten

½ cup (120 ml) flavorless oil (vegetable, canola, grapeseed, or avocado)

⅓ cup (80 ml) water

1 teaspoon vanilla extract

Instructions

Preheat oven to 350ºF (180ºC). Grease a 9×5-inch loaf pan.

In a large bowl, whisk sugars, flour, baking soda, salt, and pumpkin pie spice.

Make a well in the center. Add pumpkin puree, eggs, oil, water, and vanilla.

Mix gently until just combined. Do not overmix.

Pour batter into loaf pan and smooth the top.

Bake for about 60 minutes. Start checking at 55 minutes.

Bread is ready when a toothpick inserted in the center comes out clean.

Cool completely in the pan before slicing to prevent collapsing.
Notes
Use pumpkin puree, not pumpkin pie filling.
Don’t overmix; a few lumps are fine.
Optional: Add chocolate chips, pecans, or walnuts.
Bread may crack on top—this is normal and shows proper rise.
Freezer-friendly: wrap slices individually for quick breakfasts.
