Description

Fluffy pumpkin cinnamon rolls filled with warm fall spices and topped with a rich maple frosting. This small-batch recipe makes six cozy rolls—perfect for brunch, fall mornings, or a sweet treat that fills your home with autumn aromas.

Ingredients

Scale

For the rolls:

  • ⅓ cup (80 ml) whole milk, warmed (100–115ºF / 38–46ºC)

  • 2 cups (250 g) all-purpose flour

  • 1½ tsp instant yeast

  • 2 tbsp light brown sugar

  • 1 tsp ground cinnamon

  • ¼ tsp salt

  • ½ cup (120 g) pumpkin puree

  • 1 tbsp unsalted butter, melted

  • 1 large egg, lightly beaten

For the filling:

  • 2 tbsp light brown sugar

  • 2 tbsp granulated sugar

  • ½ tbsp ground cinnamon

  • ¼ tsp ground ginger

  • ¼ tsp ground nutmeg

  • ⅛ tsp allspice

  • ⅛ tsp ground cloves

  • 3 tbsp unsalted butter, softened

For the maple frosting:

  • 2 tbsp unsalted butter, softened

  • 2 tbsp pure maple syrup

  • 1 tsp vanilla extract

  • 2 tbsp whole milk

  • 2 cups (240 g) powdered sugar, sifted

  • ⅛ tsp salt

For the egg wash:

  • 1 large egg yolk

  • 1 tbsp water

Instructions

  • Warm milk to 180ºF (82ºC), then cool to 100–115ºF (38–46ºC).

  • In a mixing bowl, combine flour, yeast, brown sugar, cinnamon, and salt.

  • In another bowl, whisk milk, pumpkin puree, melted butter, and egg.

  • Combine wet and dry ingredients. Knead 7–8 minutes until soft and slightly sticky (add flour as needed).

  • Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.

  • Mix sugars and spices for the filling.

  • Roll dough into a 10×12-inch rectangle. Spread softened butter, then sprinkle filling evenly.

  • Roll up tightly and cut into 6 rolls.

  • Arrange in a greased 6-inch pan. Let rise 25 minutes.

  • Preheat oven to 350ºF (175ºC). Brush with egg wash.

  • Bake 20–25 minutes. Cool 10–15 minutes.

  • For frosting: mix butter, maple syrup, vanilla, milk, powdered sugar, and salt until smooth. Spread over warm rolls.

Notes

Allow full rise times for fluffy texture.

Add flour sparingly if dough is too sticky.

Place rolls snugly in pan for gooey centers.

Frost when slightly cooled so icing stays in place.

Can substitute pumpkin puree with sweet potato or butternut squash puree.
