Description
Soft and tender pumpkin muffins filled with warm spices, topped with a buttery crumb topping, and optionally finished with a sweet maple icing. These cozy, bakery-style muffins are perfect for fall mornings, brunch gatherings, or an afternoon treat with coffee.
Ingredients
Muffins:

219 g (1 ¾ cups) all-purpose flour, spooned & leveled

1 tsp baking soda

2 tsp ground cinnamon

1 tsp pumpkin pie spice*

120 ml (½ cup) canola or vegetable oil

100 g (½ cup) granulated sugar

100 g (½ cup) packed light or dark brown sugar

340 g (1 ½ cups) canned pumpkin puree

2 large eggs, at room temperature

60 ml (¼ cup) milk*
Crumb Topping:

94 g (¾ cup) all-purpose flour, spooned & leveled

50 g (¼ cup) granulated sugar

50 g (¼ cup) packed light or dark brown sugar

1 tsp pumpkin pie spice*

85 g (6 tbsp) unsalted butter, melted
Maple Icing (optional):

180 g (1 ½ cups) confectioners’ sugar

30 ml (2 tbsp) pure maple syrup

30 ml (2 tbsp) milk*
*Any milk of choice works. For pumpkin pie spice substitute: 1 tsp cinnamon + pinch of nutmeg and ginger.
Instructions

Preheat oven to 218°C (425°F). Line a 12-count muffin tin with liners or grease; prepare a second tin for excess batter.

In a large bowl, whisk flour, baking soda, cinnamon, pumpkin pie spice, and salt.

In another bowl, whisk oil, both sugars, pumpkin puree, eggs, and milk until smooth.

Fold wet ingredients into dry just until no streaks of flour remain—avoid overmixing. Fill liners almost to the top.

Make crumb topping: whisk flour, sugars, and pumpkin pie spice; stir in melted butter with a fork until crumbly. Sprinkle evenly over muffin batter, pressing lightly.

Bake 5 minutes at 218°C (425°F), then reduce to 177°C (350°F) and bake 16–17 minutes more, until a toothpick comes out clean.

Cool muffins 10 minutes before drizzling with maple icing, if using.
Notes
The initial high-heat bake helps create bakery-style domes.
Use pumpkin puree, not pumpkin pie filling.
If crumb topping is too wet, add a little extra flour until clumps form.
Maple icing adds extra sweetness but is optional.
