Description
A cozy fall pizza featuring creamy pumpkin puree, sweet caramelized onions, garlic, and melted Gouda cheese on a crisp homemade crust.

- 2 tablespoons extra-virgin olive oil
- 1 large yellow onion, peeled and thinly sliced
- 3 to 4 garlic cloves, minced
- 1/4 to 1/2 teaspoon crushed red pepper flakes, optional
- 1/2 teaspoon kosher salt
- 16 ounces fresh pizza dough, room temperature
- 3/4 cup canned pumpkin puree
- 5 ounces freshly grated Gouda cheese, about 1 1/4 cups
- Finely chopped fresh parsley, optional garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook for 7 to 8 minutes, stirring occasionally, until softened.
- Reduce the heat to low and continue cooking the onion for 20 to 30 minutes, stirring every few minutes, until golden and caramelized.
- During the final 5 minutes, stir in the garlic, kosher salt, and crushed red pepper flakes, if using.
- Place an oven rack in the center-top position. Put a pizza stone or baking sheet on the rack and preheat the oven to 475°F.
- Place the pizza dough on a lightly floured work surface. Stretch or roll it into a 12- to 14-inch round.
- Transfer the dough to parchment paper and pierce it several times with a fork.
- Spread the pumpkin puree evenly over the dough, leaving a 1/2-inch border.
- Scatter the caramelized onion and garlic mixture evenly over the pumpkin.
- Top evenly with the grated Gouda cheese.
- Transfer the pizza, still on the parchment paper, to the preheated pizza stone or baking sheet.
- Bake for about 12 minutes, until the crust is crisp and golden and the cheese is melted.
- Garnish with chopped parsley, if desired, and slice into 8 pieces.
Notes
- Store leftover pizza in an airtight container or tightly wrapped in the refrigerator for up to 4 days.
- For the crispiest reheated crust, warm 1 or 2 slices in a covered skillet over medium-low heat.
- Add a few drops of water to the side of the skillet, away from the pizza, then cover again to help melt the cheese.
- Smoked Gouda may be substituted for regular Gouda for a deeper, savory flavor.
- Fresh thyme or sage may be used instead of parsley for garnish.
