Description

Soft, buttery Pumpkin Spice Cookies packed with white chocolate chips and pumpkin spice chips. This easy no-chill fall cookie recipe takes less than 30 minutes from preparation to baking.


Ingredients

  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups white chocolate chips
  • 1 cup pumpkin spice chips

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Whisk the flour, pumpkin spice, baking soda, and salt together in a medium mixing bowl. Set aside.
  3. Cream the butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 5 minutes. Scrape down the sides of the bowl as needed.
  4. Add the vanilla and eggs and mix just until the eggs are incorporated.
  5. Turn the mixer to low and gradually add the flour mixture. Mix just until combined.
  6. Fold in the white chocolate chips and pumpkin spice chips.
  7. Scoop about 2 tablespoons of cookie dough for each cookie onto the prepared baking sheet, leaving about 2 inches between portions.
  8. Bake for 10 to 14 minutes, until the edges turn lightly golden and the centers remain soft.
  9. Let the cookies rest briefly on the baking sheet, then transfer them to a wire rack to cool.

Notes

  1. Use room-temperature butter and eggs for smooth, even mixing.
  2. Measure the flour lightly rather than packing it into the measuring cup.
  3. Do not overmix the dough after adding the flour.
  4. Begin checking the cookies after 10 minutes because oven temperatures can vary.
  5. Store cooled cookies in an airtight container at room temperature for 3 to 4 days.
  6. Freeze cooled cookies in a freezer-safe container for up to 2 months.
