Ingredients
-
4 cups chicken or vegetable broth
-
2 cups water
-
2 tbsp soy sauce
-
1 tbsp miso paste (optional but recommended)
-
1 tbsp sesame oil
-
2 cloves garlic, minced
-
1-inch piece ginger, sliced
-
2 packs instant ramen noodles (discard seasoning packets)
-
2 boiled eggs (soft or hard)
-
½ cup shredded cooked chicken (optional)
-
½ cup mushrooms, sliced
-
¼ cup green onions, sliced
-
½ cup baby spinach or bok choy
-
Sesame seeds, chili oil, or sriracha for garnish
Instructions
-
In a pot, combine broth, water, soy sauce, miso paste, sesame oil, garlic, and ginger. Simmer until fragrant and miso dissolves.
-
Add ramen noodles; cook 3–4 minutes until tender.
-
Stir in mushrooms and spinach/bok choy; cook 2–3 minutes until softened.
-
Divide noodles into bowls. Pour broth and veggies over top.
-
Garnish with boiled eggs, shredded chicken (if using), green onions, sesame seeds, and chili oil or sriracha.
Notes
Soft-boiled eggs (6–7 minutes) make the ramen extra authentic.
Miso adds rich umami, but can be omitted.
Cook noodles just until tender—overcooking makes them mushy.
Swap proteins with tofu, shrimp, or pork.
Store noodles and broth separately to prevent sogginess.
