Description

Juicy grilled chicken skewers marinated in creamy ranch dressing, garlic, and parmesan cheese for a simple, flavorful dinner perfect for BBQs or weeknight meals.


Ingredients

  • lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
  • ½ cup ranch dressing
  • ¼ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)
  • Wooden or metal skewers

Instructions

  1. In a bowl combine ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice.
  2. Mix well until the marinade becomes smooth and fully combined.
  3. Place cubed chicken into a resealable bag or shallow dish and pour the marinade over the chicken.
  4. Coat the chicken evenly and refrigerate for at least 30 minutes to marinate.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated chicken pieces onto skewers leaving small spaces between pieces.
  7. Place skewers on the grill and cook for 10–15 minutes turning occasionally.
  8. Cook until the chicken reaches an internal temperature of 165°F and develops light grill marks.
  9. Remove from grill and let the skewers rest for a few minutes.
  10. Garnish with extra parmesan or parsley and serve.

Notes

  1. Soak wooden skewers in water for about 15 minutes before grilling to prevent burning.
  2. Chicken thighs can be used instead of breasts for juicier skewers.
  3. Marinate the chicken up to 2 hours or overnight for stronger flavor.
  4. Serve with ranch dressing, BBQ sauce, or yogurt garlic dip for extra flavor.
