- 1½ lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
- ½ cup ranch dressing
- ¼ cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 teaspoon lemon juice (optional)

Instructions
- In a bowl combine ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice.
- Mix well until the marinade becomes smooth and fully combined.
- Place cubed chicken into a resealable bag or shallow dish and pour the marinade over the chicken.
- Coat the chicken evenly and refrigerate for at least 30 minutes to marinate.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken pieces onto skewers leaving small spaces between pieces.
- Place skewers on the grill and cook for 10–15 minutes turning occasionally.
- Cook until the chicken reaches an internal temperature of 165°F and develops light grill marks.
- Remove from grill and let the skewers rest for a few minutes.
- Garnish with extra parmesan or parsley and serve.
Notes
- Soak wooden skewers in water for about 15 minutes before grilling to prevent burning.
- Chicken thighs can be used instead of breasts for juicier skewers.
- Marinate the chicken up to 2 hours or overnight for stronger flavor.
- Serve with ranch dressing, BBQ sauce, or yogurt garlic dip for extra flavor.
