Description

Soft raspberry lemon bars with a brownie texture, fresh raspberries, and a sweet citrus glaze.


Ingredients

Scale
  • 1/2 cup butter softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • zest 1/2 lemon
  • 3/4 cup all purpose flour
  • 3/41 cup fresh raspberries
  • 1 cup powdered sugar
  • 1 tbsp seedless raspberry jam
  • 1 tbsp lemon juice
  • zest 1/2 lemon

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 pan.
  2. Mix butter and sugar until smooth.
  3. Add eggs, lemon juice, salt, and zest and mix well.
  4. Add flour and mix until combined.
  5. Fold in raspberries gently.
  6. Spread batter into pan and bake for 25 minutes.
  7. Cool completely.
  8. Whisk glaze ingredients and spread over bars.
  9. Let glaze set and cut into squares.

Notes

  1. Do not overbake for soft texture.
  2. Use fresh raspberries for best flavor.
  3. Cool completely before glazing.
  4. Store in airtight container.
