Description

A classic Rhubarb Crunch with a buttery oat crumble layered on top and bottom, filled with sweet-tart rhubarb.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup quick-cooking oatmeal
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1 teaspoon cinnamon
  • 4 cups diced rhubarb
  • 1 cup white sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • Vanilla ice cream or whipped cream

Instructions

  1. Preheat oven to 350°F and grease baking dish
  2. Mix flour oatmeal brown sugar butter and cinnamon
  3. Press half mixture into pan
  4. Add diced rhubarb
  5. Cook sugar water and cornstarch until thick
  6. Pour mixture over rhubarb
  7. Top with remaining crumble
  8. Bake for 1 hour
  9. Cool slightly and serve

Notes

  1. Use fresh rhubarb for best flavor
  2. Let cool before slicing
  3. Serve warm with ice cream
