Description

Soft and moist rhubarb muffins made with Greek yogurt and topped with cinnamon sugar.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup Greek yogurt
  • 8 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced rhubarb
  • 3 tablespoons sugar (topping)
  • 1/2 teaspoon cinnamon (topping)

Instructions

  1. Preheat oven to 400°F and line muffin tin
  2. Mix dry ingredients in a bowl
  3. Whisk wet ingredients in another bowl
  4. Combine wet and dry ingredients gently
  5. Fold in diced rhubarb
  6. Divide batter into muffin cups
  7. Mix cinnamon sugar topping
  8. Sprinkle topping over muffins
  9. Bake for 20-22 minutes
  10. Cool before serving

Notes

  1. Do not overmix batter
  2. Use fresh rhubarb for best results
  3. Store in airtight container
  4. Freeze for longer storage
