Description

Delicate rhubarb scones with a tender crumb and lightly sweet flavor, perfect for spring brunch or afternoon tea.


Ingredients

Scale
  • 1 cup chopped rhubarb
  • 1/2 cup granulated sugar
  • 2 1/4 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 8 Tbsp unsalted cold butter
  • 1/2 cup cold buttermilk or half-and-half

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper
  2. Combine flour, sugar, baking powder, and salt in a food processor
  3. Add cold butter and pulse until coarse crumbs form
  4. Transfer to a bowl and mix in buttermilk and vanilla extract
  5. Fold in chopped rhubarb gently
  6. Turn dough onto a floured surface and knead lightly
  7. Shape into a rectangle and cut into scones
  8. Place on baking sheet and bake for 20 minutes until golden
  9. Cool slightly before serving

Notes

  1. Freeze extra rhubarb for later use
  2. Do not overwork the dough
  3. Use cold butter for best texture
