Description

A moist and tender Rhubarb Sour Cream Cake with a cinnamon sugar topping, perfect for breakfast or dessert.


Ingredients

Scale
  • 1 1/2 cups sugar
  • 1/2 cup butter, melted
  • 1 egg
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 1/2 cups chopped rhubarb
  • 1/3 cup sugar (topping)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F and grease baking dish
  2. Mix sugar, butter, vanilla, sour cream, and egg until smooth
  3. Stir in flour and baking soda until combined
  4. Fold in chopped rhubarb
  5. Spread batter into pan evenly
  6. Mix cinnamon and sugar and sprinkle on top
  7. Bake for 35 to 40 minutes until done
  8. Let cool slightly before serving

Notes

  1. Do not overmix batter
  2. Use full-fat sour cream for best texture
  3. Drain frozen rhubarb before use
