Description

Creamy chicken and seasoned rice baked beneath a golden topping of buttery Ritz crackers and melted cheddar cheese.


Ingredients

  • 3 cups cooked chicken, cubed or shredded
  • 1 box chicken Rice-A-Roni, 6.9 ounces
  • Water and butter required on the Rice-A-Roni package
  • 1 cup sour cream
  • 1 can condensed cream of chicken soup, 10.5 ounces
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 tablespoons butter, melted
  • 1 sleeve Ritz crackers, crushed
  • 1 cup shredded cheddar cheese
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F and lightly coat a 9-by-13-inch baking dish with nonstick cooking spray.
  2. Prepare the chicken Rice-A-Roni according to the package directions.
  3. Add the sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper to a large bowl. Whisk until smooth.
  4. Add the cooked chicken and prepared rice to the creamy mixture. Stir until evenly combined.
  5. Transfer the chicken and rice mixture to the prepared baking dish and spread it into an even layer.
  6. Combine the melted butter and crushed Ritz crackers in a small bowl. Stir in the shredded cheddar cheese.
  7. Spread the cracker and cheese mixture evenly over the casserole.
  8. Bake uncovered for 25 minutes, or until the filling bubbles and the cheese melts.
  9. Broil for 2 to 3 minutes, watching closely, until the topping turns golden brown.
  10. Rest the casserole for 5 minutes before serving.

Notes

  1. Use cooked chicken, such as leftover roasted chicken or rotisserie chicken.
  2. Keep the cracker topping separate when assembling the casserole ahead of time.
  3. Refrigerate leftovers in an airtight container for up to 3 days.
  4. Freeze the cooled casserole for up to 2 months.
  5. Reheat covered at 350°F for 20 to 25 minutes, then uncover briefly to crisp the topping.
