Description

Roast Chicken Shawarma Gyros are a fusion of two beloved street foods: Middle Eastern shawarma and Greek gyros. This version uses marinated roasted chicken, topped with fresh veggies and creamy sauces, all wrapped in soft pita bread. It’s a flavor-packed dish with a balance of spices, tangy sauces, and fresh textures.

For the Marinade:

  • 1 cup plain yogurt

  • 2 tbsp lemon juice

  • 4 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp turmeric

  • Salt and pepper to taste

For the Chicken:

  • 4 boneless, skinless chicken thighs

For the Toppings:

  • 1 cup lettuce, chopped

  • 1 cup tomatoes, diced

  • 1 cup cucumbers, sliced

  • ½ onion, thinly sliced

  • Pickled vegetables (optional)

For the Sauces:

  • 1 cup tzatziki sauce (or tahini sauce)

  • 1 tbsp olive oil (for drizzling)

For the Pita:

  • 4 pita bread or soft flatbreads


Instructions

Marinate the Chicken

  • Combine yogurt, lemon juice, garlic, olive oil, paprika, cumin, turmeric, salt, and pepper in a bowl.

  • Add the chicken thighs and coat well.

  • Marinate for at least 1 hour, or overnight for better flavor.

2. Cook the Chicken

  • Preheat your oven to 400°F (200°C).

  • Place the marinated chicken on a baking sheet. Roast for 25–30 minutes, until golden brown and cooked through.

  • Alternatively, grill the chicken for a smoky flavor, about 5–7 minutes per side.

3. Assemble the Gyros

  • Warm the pita bread in the oven or on the grill.

  • Slice the roasted chicken and place it on the pita.

  • Add lettuce, tomatoes, cucumbers, onions, and any pickled vegetables.

  • Drizzle with tzatziki or tahini sauce.

4. Serve and Enjoy

  • Wrap the pita to enclose the filling. Serve immediately.

Notes

If you prefer a lighter version, serve the chicken on a bed of rice or in a bowl instead of a pita wrap.

For a gluten-free option, use gluten-free pita or lettuce wraps.

Customize the toppings by adding grilled veggies or extra sauces.
