- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 16 ounces Velveeta cheese, cut into 1-inch cubes
- 1 can Rotel diced tomatoes and green chilies, 10 ounces, undrained
- Tortilla chips, crackers, or sliced vegetables for serving
Instructions
- Heat a large skillet over medium-high heat.
- Add the ground beef and break it into small crumbles with a wooden spoon.
- Cook the beef for 6 to 8 minutes, stirring often, until no pink remains.
- Drain the cooked beef thoroughly in a fine-mesh strainer set over a heatproof bowl.
- Return the beef to the skillet and season it with salt and black pepper.
- Reduce the heat to medium-low.
- Add the Velveeta cubes and the entire can of Rotel with its juices.
- Stir slowly and continuously for 5 to 7 minutes until the cheese melts and the dip looks smooth.
- Lower the heat if the dip bubbles rapidly around the edges.
- Serve warm with tortilla chips, crackers, or sliced vegetables.
Notes
- Use 90/10 lean ground beef for plenty of flavor without excessive grease.
- For extra heat, use hot Rotel instead of adding a large amount of hot sauce.
- For a seasoned variation, stir 1 tablespoon of taco seasoning into the cooked beef.
- Keep the dip warm in a small slow cooker and stir it occasionally.
- If the dip becomes too thick, stir in 1 tablespoon of milk at a time.
