Description

Medovik, or Russian Honey Cake, is a beloved dessert known for its delicate honey-flavored layers and creamy filling. This cake has a rich history, evolving from royal kitchens to Soviet-era homes and beyond. Its layers are soft yet flavorful, and the cream adds a perfect tang. It’s a dessert that tells a story of tradition, nostalgia, and timeless flavor.

Ingredients

Scale

For the Cake:

  • 3 cups all-purpose flour

  • 2 eggs

  • 1 cup sugar

  • 1/2 cup honey (light honey works best)

  • 1 teaspoon baking soda

  • 1/2 cup butter

For the Frosting:

  • 2 cups sour cream (full-fat is best)

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract (optional)

Optional Ingredients for Variations:

  • Crushed walnuts or hazelnuts

  • Sweetened condensed milk (instead of or mixed with sour cream)

  • Vanilla extract

  • Fresh berries for garnish

  • Lemon zest (for a fresh twist)

Instructions

  • In a saucepan, mix honey, sugar, and butter.

  • Warm the mixture over low heat, stirring until melted.

  • Add a pinch of baking soda. Stir and let it bubble for a minute.

  • Quickly stir in the eggs.

  • Gradually mix in the flour until a soft dough forms. Add more flour if needed.

  • Divide the dough into 6-10 equal parts. Roll each into a thin circle, about 2 mm thick.

  • Bake the layers at 350°F (180°C) for 5–7 minutes, until light golden brown. Cool on a rack.

  • Prepare the frosting by mixing sour cream, powdered sugar, and vanilla until smooth and fluffy.

  • Once the cake layers are cooled, start layering. Spread a thin layer of frosting between each layer.

  • After stacking all the layers, apply a crumb coat with the frosting and chill for 20–30 minutes.

  • Apply the final layer of frosting, covering the sides and top.

  • Decorate with crushed cake crumbs, nuts, or berries if desired.

  • Refrigerate the cake for at least 6 hours, preferably overnight.

  • Before serving, allow the cake to sit at room temperature for 15 minutes for easier slicing.

Notes

Medovik is best after resting, as the layers absorb the cream and become soft.

You can experiment with different frostings or add-ins like dulce de leche, whipped cream, or mascarpone.

For a lighter version, substitute low-fat sour cream or yogurt for the frosting.
