Description

Fresh and flavorful salmon with smoky seasoning and vibrant mango salsa makes an easy seafood dinner perfect for summer meals.

Ingredients

Scale
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon maple syrup or brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, crushed
  • 1/2 teaspoon kosher salt
  • 2 teaspoons Tajin seasoning
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 4 salmon fillets, 4-6 ounces each
  • 1 large ripe avocado, diced
  • 1 large mango, diced
  • 1/2 red bell pepper, finely diced
  • 2 tablespoons chopped cilantro
  • 1/2 jalapeño, seeded and minced
  • 1/4 cup diced red onion
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt

Instructions

  1. Whisk together soy sauce, maple syrup, olive oil, lime juice, garlic, salt, Tajin, paprika, and chili powder in a large bowl.
  2. Add the salmon fillets and coat them well in the marinade. Refrigerate for at least 20 minutes.
  3. Dice the avocado, mango, bell pepper, jalapeño, and red onion. Mix with cilantro, lime juice, and salt to make the salsa.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Remove salmon from the marinade and grill skin-side down for 7 to 9 minutes, flipping halfway through cooking.
  6. For baked salmon, bake at 400 degrees Fahrenheit for 12 to 15 minutes.
  7. Serve the salmon immediately topped with mango salsa.

Notes

  1. Do not over-marinate the salmon because lime juice can affect the texture.
  2. Use ripe mangoes and avocados for the best flavor and texture.
  3. Store leftover salmon and salsa separately in airtight containers.
  4. Bake the salmon instead of grilling if preferred.
