Description

This sausage and pasta dinner is a quick stovetop meal made with smoked sausage, tender pasta, tomatoes, and melted cheese.


Ingredients

Scale
  • 12 ounces smoked sausages or hot dogs, sliced
  • 8 ounces dry pasta such as macaroni or penne
  • 1 tablespoon tomato paste
  • 2 medium tomatoes, diced
  • 1 cup shredded cheese, mozzarella or cheddar
  • 2 tablespoons chopped fresh herbs
  • 1 tablespoon vegetable oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente, then drain.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add sliced sausages and cook until lightly browned.
  4. Stir in diced tomatoes and cook until softened.
  5. Add tomato paste, salt, and black pepper and mix well.
  6. Add the cooked pasta and toss until evenly coated.
  7. Sprinkle cheese over the pasta, cover, and cook until melted.
  8. Remove from heat and garnish with fresh herbs before serving.

Notes

  1. You can use turkey or chicken sausage for a lighter option.
  2. Any melting cheese works well.
  3. Store leftovers in an airtight container in the refrigerator for up to 2 days.
