Description

Simple Peach Cake is a tender American dessert made with fresh peaches, buttery batter, and a sweet powdered sugar finish. Serve it chilled with whipped cream or vanilla ice cream.


Ingredients

  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter, melted and cooled
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 6 tablespoons whole milk, room temperature
  • 6 ripe peaches, peeled and chopped into chunks
  • 1 to 2 tablespoons brown sugar, for the pan
  • Powdered sugar, for serving
  • Sweetened whipped cream or vanilla ice cream, for serving

Instructions

  1. Preheat the oven to 355°F. Grease a 9-inch springform pan and sprinkle the inside with a little brown sugar.
  2. Line the bottom of the pan with parchment paper. Wrap the outside of the springform pan with aluminum foil and place it on a baking sheet.
  3. Whisk the flour and baking powder together in a medium bowl, then set aside.
  4. Beat the egg, egg yolk, and sugar until the mixture looks light and fluffy.
  5. Add the vanilla extract and cooled melted butter, then mix until combined.
  6. Add the room-temperature milk and stir until smooth.
  7. Whisk in the flour mixture just until the batter comes together.
  8. Gently fold the chopped peaches into the batter.
  9. Pour the batter into the prepared pan and spread it evenly.
  10. Bake for 50 to 55 minutes, or until the top looks set and a toothpick inserted near the center comes out with moist crumbs.
  11. Cool the cake completely in the pan, then refrigerate it before serving.
  12. Dust with powdered sugar and serve with sweetened whipped cream or vanilla ice cream.

Notes

  1. Use ripe but not mushy peaches for the best texture.
  2. Let the melted butter cool before adding it to the egg mixture.
  3. Do not overmix after adding the flour.
  4. Chill the cake before slicing for cleaner pieces.
  5. Store leftovers covered in the refrigerator for up to 4 days.
