- 1 tablespoon oil
- 1 cup onion, diced
- 1 tablespoon minced garlic
- 32 ounces beef broth
- 3 cups cubed russet potatoes
- 14.5 ounces petite diced tomatoes
- 8 ounces tomato sauce
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 16 ounces frozen mixed vegetables
Instructions
- Heat oil in a large soup pot over medium heat.
- Add diced onion and cook for 1 to 2 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in beef broth and add potatoes, diced tomatoes, tomato sauce, parsley, oregano, thyme, salt, and pepper.
- Bring to a boil over medium high heat.
- Reduce heat to medium low and stir in frozen mixed vegetables.
- Simmer for 20 to 25 minutes until potatoes are fork tender.
- Remove from heat and serve warm.
Notes
- Swap beef broth for vegetable broth to make it vegetarian.
- Add jalapenos, red pepper flakes, or paprika for extra heat.
- Cool completely before freezing for up to 3 months.
- Store in the refrigerator for up to 7 days.
