Description

Skirt steak served with a fresh avocado chimichurri sauce made from herbs, olive oil, and vinegar.


Ingredients

Scale
  • 1 cup cilantro leaves
  • 1 cup parsley leaves
  • 1 tablespoon garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 medium avocado
  • 1 pound skirt steak
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Prepare the chimichurri sauce in a food processor and fold in the avocado.
  2. Cut, dry, and season the skirt steak.
  3. Sear the steak in a hot skillet until medium-rare.
  4. Rest, slice against the grain, and serve with chimichurri.

Notes

  1. Slice the steak only after resting.
  2. Use fresh herbs for the best flavor.
