Description

A cozy slow cooker casserole made with ground beef, kidney beans, sliced potatoes, onion, and tomato soup. This simple layered dinner serves six and requires very little hands-on preparation.


Ingredients

  • 1 1/2 pounds raw ground beef
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 4 medium russet potatoes, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 can (10.5 ounces) condensed tomato soup
  • 1/2 cup water
  • Salt, to taste
  • Ground black pepper, to taste
  • Cooking spray or a small amount of oil

Instructions

  1. Lightly grease the inside of a 5- to 6-quart slow cooker with cooking spray or oil.
  2. Spread the raw ground beef in a thin, even layer across the bottom of the slow cooker and gently break apart large pieces.
  3. Spread the sliced onion evenly over the ground beef.
  4. Arrange the thinly sliced potatoes over the onion, allowing the edges to overlap slightly.
  5. Scatter the drained and rinsed kidney beans evenly over the potatoes.
  6. Whisk the condensed tomato soup with 1/2 cup water until smooth.
  7. Pour the tomato soup mixture evenly over the ingredients without stirring the layers.
  8. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  9. Check that the potatoes are tender and the ground beef has cooked completely.
  10. Gently stir the casserole from the bottom, season with salt and black pepper, and serve warm.

Notes

  1. Use canned kidney beans rather than uncooked dried kidney beans.
  2. Slice the potatoes thinly and evenly so they cook completely.
  3. For extra flavor, add garlic powder, smoked paprika, or Worcestershire sauce to the beef.
  4. For a sweet-tangy sauce, add 1 tablespoon brown sugar and 1 teaspoon apple cider vinegar to the tomato soup.
  5. Add shredded cheddar or Colby Jack during the final 10 to 15 minutes for a cheesy variation.
  6. Refrigerate leftovers in an airtight container for up to 4 days.
  7. Freeze individual portions for up to 2 months.
