Description
Tender beef stew meat and creamy baby potatoes cook slowly with fresh garlic, butter, onion powder, garlic powder, and seasoned salt. This comforting crockpot dinner requires only ten minutes of preparation and creates its own rich garlic butter sauce.
Ingredients
Scale
- 2 pounds beef stew meat, cut into even bite-sized pieces
- 1 pound baby yellow potatoes or baby Yukon gold potatoes
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons seasoned salt
- 1 tablespoon chopped fresh garlic
- 5 tablespoons unsalted butter, cut into pats
- Nonstick cooking spray, for the slow cooker
- Chopped parsley, optional, for serving
Instructions
- Lightly coat a 6-quart slow cooker insert with nonstick cooking spray.
- Cut any large pieces of stew meat into even 1-inch cubes, then pat the beef dry with paper towels.
- Rinse and dry the baby potatoes. Leave small potatoes whole and halve larger potatoes.
- Place the beef on one half of the slow cooker and the potatoes on the other half.
- Sprinkle the onion powder, garlic powder, and seasoned salt evenly over the beef and potatoes.
- Gently toss the beef and potatoes separately to coat them while keeping them mostly divided.
- Scatter the chopped garlic over the top, then arrange the butter pats evenly over the meat and potatoes.
- Cover and cook on low for 6 hours, or until the beef feels very tender and the potatoes cook through.
- Check the beef and potatoes near the end. Continue cooking for 30 minutes if either ingredient remains firm.
- Stir gently to coat everything in the garlic butter sauce.
- Taste and add more salt only when needed.
- Serve warm with the buttery cooking juices spooned over each portion.
Notes
- Choose evenly sized beef pieces and potatoes so they finish cooking together.
- Halve any baby potato wider than about 2 inches.
- Avoid lifting the lid during the first 5 hours because the cooker loses heat.
- Searing the beef before slow cooking remains optional, but it adds color and a deeper savory flavor.
- Add sliced mushrooms during the final 2 hours when desired.
- For thicker sauce, whisk 1 teaspoon cornstarch with a few tablespoons of cooking liquid and stir it into the cooker.
- Refrigerate leftovers in an airtight container for up to 4 days.
- Use certified gluten-free seasoned salt when preparing the recipe for a gluten-free diet.
