Description

A comforting, hands-off weeknight meal featuring melt-in-your-mouth beef bites and tender potatoes simmered in a rich garlic butter sauce. Perfect for busy days, this slow cooker dish is effortless, satisfying, and full of savory flavor.

Ingredients

Scale
  • 2 lbs beef stew meat, cut into bite-sized pieces

  • 1½ lbs baby potatoes, halved

  • 4 tbsp unsalted butter, melted

  • 6 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp smoked paprika

  • ½ tsp onion powder

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp crushed red pepper flakes (optional)

  • 1 cup beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

  • 2 tbsp fresh parsley, chopped

Instructions

  • Cut beef into bite-sized pieces and halve the potatoes.

  • In a bowl, toss beef with salt, pepper, paprika, onion powder, oregano, thyme, and red pepper flakes.

  • Place seasoned beef and potatoes in the slow cooker.

  • Pour in melted butter, garlic, beef broth, and Worcestershire sauce. Stir well.

  • Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is tender and potatoes are soft.

  • Optional: For a thicker sauce, add the cornstarch slurry in the last 15 minutes.

  • Sprinkle with parsley before serving.

Notes

Use rich beef broth for deeper flavor.

Add more red pepper flakes if you prefer heat.

Avoid stirring too often to let flavors meld.

Russet or Yukon potatoes can replace baby potatoes.

Chuck roast or round steak can be used instead of stew meat.

Assemble ahead as a freezer meal (excluding parsley and cornstarch).
