-
2 cups (475 ml) low-sodium chicken broth
-
½ cup (120 ml) chipotle BBQ sauce
-
1 tbsp (15 ml) olive oil
-
½ tsp (1.5 g) smoked paprika
-
½ tsp (1.5 g) garlic powder
-
Salt and pepper, to taste
Optional Garnishes:
-
Chopped cilantro
-
Sliced green onions
-
Lime wedges
-
Shredded cheese

Black beans or corn
Instructions
-
Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, smoked paprika, and garlic powder. Sear for 5–7 minutes until golden and fully cooked. Remove and set aside. -
Toast the Rice:
In the same skillet, add uncooked rice and toast for 1–2 minutes, stirring often until fragrant and lightly golden. -
Simmer to Perfection:
Pour in chicken broth, bring to a boil, then cover and reduce heat to low. Simmer for 15–18 minutes until rice is tender and liquid absorbed. -
Add the BBQ Magic:
Return cooked chicken to the skillet. Stir in the chipotle BBQ sauce and mix until the rice and chicken are fully coated. Simmer for 2–3 minutes on low to blend flavors. -
Garnish and Serve:
Top with cilantro, green onions, lime juice, or melted cheese. Add black beans or corn for extra heartiness. Serve warm.
Notes
Don’t rush the rice — let it steam covered for the fluffiest texture.
Adjust spice by adding chipotle powder or diced jalapeños.
For a vegetarian option, replace chicken with tofu, beans, or sautéed veggies.
A sprinkle of shredded cheddar or pepper jack just before serving adds delicious richness.
Store leftovers in the fridge up to 3 days or freeze for up to 2 months.
