Description

Snickerdoodle Apple Pie Bites combine soft cinnamon-sugar cookie cups with sweet apple pie filling and a caramel drizzle. These easy mini desserts are perfect for fall gatherings, holiday parties, potlucks, and cookie trays.


Ingredients

  • 1 package snickerdoodle cookie mix, 17 to 18 ounces
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 can apple pie filling, 21 ounces
  • Caramel ice cream topping, for drizzling

Instructions

  1. Preheat the oven to 375°F. Thoroughly coat a 24-cup mini muffin pan with cooking spray.
  2. Stir together the egg, softened butter, and snickerdoodle cookie mix until a dough forms. Knead gently by hand if needed.
  3. Pour the cinnamon-sugar packet from the cookie mix into a small bowl.
  4. Use a tablespoon-sized cookie scoop to divide the dough into 24 balls.
  5. Roll each dough ball in the cinnamon-sugar mixture, then place each ball into the prepared mini muffin pan.
  6. Bake for 10 to 12 minutes, or until the edges turn lightly golden brown.
  7. Immediately after removing the pan from the oven, press the back of a tablespoon into the center of each cookie to form a cup.
  8. Cool the cookie cups in the pan for 3 to 5 minutes.
  9. Run a knife gently around the edges, remove the cookie cups from the pan, and transfer them to a wire rack.
  10. Chop the apples in the pie filling into small pieces.
  11. Spoon the chopped apple pie filling into each cooled cookie cup.
  12. Sprinkle with any remaining cinnamon sugar and drizzle with caramel ice cream topping before serving.

Notes

  1. Do not overbake the cookie cups because they continue to firm as they cool.
  2. Press the centers immediately after baking while the cookies are still soft.
  3. Use a smaller measuring spoon if a full tablespoon is too large for forming the centers.
  4. Chop the apple pieces finely so the filling fits neatly inside each cookie cup.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  6. For the best appearance and texture, add the caramel drizzle shortly before serving.
