Description

A moist peach cake with sour cream, juicy peaches, and a cinnamon sugar topping baked in a 9×13 pan.


Ingredients

Scale
  • 1½ cups sugar
  • 1 tablespoon butter
  • 2 eggs
  • ¼ cup boiling water
  • 2 cups flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 1 teaspoon salt
  • 4 to 6 peaches, sliced
  • 1 cup sugar for topping
  • 1½ teaspoons cinnamon

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch pan.
  2. Cream sugar and butter together.
  3. Add eggs and beat well.
  4. Mix baking soda with boiling water.
  5. Stir the baking soda mixture into the sour cream.
  6. Sift flour and salt together.
  7. Alternate adding flour mixture and sour cream mixture to the batter.
  8. Add vanilla extract.
  9. Pour batter into prepared pan.
  10. Fold in or arrange peach slices in the batter.
  11. Mix topping sugar and cinnamon.
  12. Spread topping evenly over batter.
  13. Bake for 35 to 45 minutes until done.

Notes

  1. Use fresh, frozen, or canned peaches.
  2. Frozen peaches may require additional baking time.
  3. Start checking for doneness at 35 minutes.
  4. Serve warm with vanilla ice cream for extra flavor.
