Ingredients

Scale
  • 5 ripe peaches, chopped
  • 1/2 cup red onion, minced
  • 1/2 red bell pepper, chopped
  • 1/2 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 jalapeño peppers, seeded and minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Wash and chop the peaches into bite-sized pieces.
  2. Mince the onion and jalapeños finely.
  3. Chop the bell pepper and cilantro.
  4. Combine all ingredients in a large bowl.
  5. Mix gently until evenly combined.
  6. Cover and refrigerate for at least 30 minutes before serving.
  7. Serve chilled with chips, grilled meats, tacos, or seafood.
