Description

Southern-Style Honey Butter Cornbread Poppers are a sweet and savory snack made of soft, golden cornbread, rich honey butter glaze, and just the right amount of sweetness. They’re bite-sized, making them perfect for gatherings, snacks, or as a side dish. With a balance of flavors and a slightly crispy outside, they’re irresistible!

Ingredients

For the Cornbread Poppers:

  • Cornmeal

  • All-purpose flour

  • Granulated sugar

  • Baking powder

  • Salt

  • Buttermilk (or substitute with milk + lemon juice/vinegar)

  • Eggs

  • Melted unsalted butter

  • Sweet corn kernels (fresh, frozen, or canned)

  • Shredded cheddar cheese (optional)

For the Honey Butter Glaze:

  • Unsalted butter

  • Honey

  • Pinch of salt

Instructions

  • Preheat the oven to 375°F (190°C). Grease a mini muffin tin.

  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.

  • In another bowl, whisk eggs, buttermilk, and melted butter until smooth.

  • Pour the wet mixture into the dry ingredients and stir gently until combined.

  • Fold in the sweet corn kernels (and cheese if using).

  • Spoon the batter into the muffin cups, filling about 3/4 full.

  • Bake for 12–15 minutes, until the tops are golden.

  • While the poppers bake, melt the butter for the glaze in a small saucepan. Add honey and salt, stirring until smooth.

  • Brush the honey butter glaze over the warm poppers.

  • Serve them warm and enjoy!

Notes

For a spicier version, add chopped jalapeños or a pinch of cayenne pepper.

Use fresh corn for the best flavor, but frozen or canned works as well.

These poppers can be made ahead and stored in an airtight container for up to 2 days.
