Description

Quick Southwest Chicken Salad made with shredded chicken, beans, corn, and a zesty lime dressing. Perfect for meal prep or sandwiches.


Ingredients

  • 1 lb cooked shredded chicken
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 12 jalapeños chopped
  • 3/4 cup cherry tomatoes
  • 1/2 cup red onion
  • 1/4 cup pepitas
  • 3/4 cup mayo or yogurt
  • 1/4 cup lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt

Instructions

  1. Mix dressing ingredients in a bowl
  2. Combine chicken, beans, corn, vegetables, and seeds
  3. Pour dressing over mixture
  4. Stir until combined
  5. Serve immediately or chill
