Description

Spiced Peach Bread is a tender, buttery quick bread filled with diced fresh peaches, dark brown sugar, buttermilk, and warm cinnamon, allspice, nutmeg, and cloves.


Ingredients

  • 1 cup packed dark brown sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 3/4 cups cake flour or all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup cultured buttermilk
  • 2 cups diced fresh peaches, skin on
  • 1 teaspoon coarse sparkling sugar, for topping

Instructions

  1. Preheat the oven to 350°F. Lightly butter a 9×5-inch loaf pan and line it with parchment paper, leaving long overhangs on two sides.
  2. Dice the peaches into small pieces and set them aside.
  3. Whisk together the flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves in a medium bowl.
  4. Add the softened butter and dark brown sugar to a stand mixer bowl. Beat for about 5 minutes, until light and fluffy.
  5. Beat in the eggs one at a time, mixing well after each addition. Continue beating for 2 to 3 minutes.
  6. Add the flour mixture in three additions, alternating with the buttermilk, beginning and ending with the dry ingredients.
  7. Finish mixing gently by hand with a spatula, then fold in the diced peaches.
  8. Spread the batter evenly in the prepared loaf pan and sprinkle the top with sparkling sugar.
  9. Bake on the center rack for 50 to 55 minutes, until the loaf rises fully and a toothpick inserted near the center comes out without wet batter.
  10. Cool the bread in the pan for 10 minutes, then lift it out with the parchment paper and transfer it to a wire rack before slicing.

Notes

  1. Use ripe but firm peaches for the best texture.
  2. Do not overmix the batter after adding the flour.
  3. All-purpose flour works well if you do not have cake flour.
  4. To make a cake flour substitute, measure 1 cup all-purpose flour, remove 2 tablespoons, replace them with 2 tablespoons cornstarch, and sift twice.
  5. Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
