Description

Refreshing Chinese-inspired zucchini noodles tossed in a spicy garlic sesame sauce.


Ingredients

Scale
  • 4 medium zucchinis, spiralized
  • 1 teaspoon salt
  • 2 garlic cloves, finely chopped
  • 2 tablespoons coconut aminos
  • 2 tablespoons tahini
  • 1 tablespoon sesame oil
  • 23 teaspoons chili powder
  • 2 teaspoons chili oil
  • 2 teaspoons honey or maple syrup
  • Toasted sesame seeds
  • Green onions

Instructions

  1. Spiralize zucchini into noodles
  2. Cut noodles into shorter lengths if desired
  3. Toss noodles with salt and rest 30 minutes
  4. Mix sauce ingredients in a bowl
  5. Gently squeeze excess moisture from noodles
  6. Add noodles to sauce
  7. Toss until coated
  8. Garnish and serve

Notes

  1. Prepare a day ahead for stronger flavor
  2. Do not over-squeeze zucchini noodles
  3. Adjust chili to preferred heat level
  4. Store leftovers in refrigerator up to 3 days
