Ingredients
-
225 g (8 oz) instant ramen noodles
-
2 tbsp (32 g) peanut butter
-
1 tbsp (15 ml) soy sauce
-
1 tbsp (15 ml) rice vinegar
-
1 tbsp (15 ml) chili garlic sauce or sriracha
-
1 tsp (5 ml) sesame oil
-
1 clove garlic, minced
-
½ tsp (1 g) grated fresh ginger
-
60 ml (¼ cup) hot water (reserved from noodles)
-
Optional garnishes: chopped peanuts, sliced green onions, fresh cilantro
Instructions
-
Cook ramen noodles according to package instructions. Before draining, reserve ¼ cup hot water.
-
In a bowl, whisk peanut butter, soy sauce, rice vinegar, chili garlic sauce (or sriracha), sesame oil, garlic, and ginger.
-
Gradually whisk in reserved hot water until sauce is smooth and creamy.
-
Drain noodles and return them to the pot. Pour sauce over noodles and toss until well coated.
-
Serve immediately with garnishes like peanuts, green onions, or cilantro.
Notes
Smooth peanut butter makes a creamy sauce; chunky adds crunch.
Adjust spice level by increasing or reducing chili sauce.
Don’t skip noodle water—it helps bind the sauce.
Add steamed vegetables or tofu for extra nutrition.
Best eaten fresh; sauce can be prepped in advance and refrigerated.
