Description

Soft, naturally sweet Spinach Banana Muffins made with fresh spinach, ripe bananas, honey, cinnamon, and whole wheat white flour. These bright green muffins are great for breakfast, lunchboxes, and snacks.


Ingredients

  • 6 ounces fresh baby spinach
  • 4 tablespoons unsalted butter, melted
  • 3/4 cup low-fat milk
  • 1/3 cup honey
  • 2 small ripe bananas
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat white flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F. Line muffin pans with paper liners and set them aside.
  2. Add the spinach, melted butter, milk, honey, bananas, egg, and vanilla extract to a blender. Blend until smooth and bright green.
  3. In a separate bowl, whisk together the whole wheat white flour, cinnamon, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the blender. Pulse only 2 to 3 short times until just combined. A few dry streaks may still show.
  5. Gently fold the batter with a spatula if needed. Do not overmix.
  6. Divide the batter evenly among 18 lined muffin cups.
  7. Bake for 18 to 20 minutes, or until the muffin tops feel firm and a tester comes out clean.
  8. Watch closely and remove the muffins before they begin to brown so they keep their green color.
  9. Remove the muffins from the pan right away and transfer them to a wire rack.
  10. Cool completely before serving.

Notes

  1. Do not overmix after adding the dry ingredients. Pulse briefly, then finish folding by hand.
  2. Do not overbake, or the muffins may lose their bright green color and turn brown around the edges.
  3. For the mildest flavor, use fresh baby spinach and ripe bananas with brown spots.
  4. Cool completely before storing so the muffins do not turn sticky.
