Description

These Spinach Cottage Cheese Flagels (Flat Bagels) are a nutritious twist on traditional bagels, combining fresh spinach and creamy cottage cheese for a soft, chewy texture with a crisp exterior. These are perfect for breakfast sandwiches or as a healthy snack!

Ingredients

Scale

For the Dough:

  • 3 ½ cups all-purpose flour (or bread flour)

  • 2 ¼ tsp (1 packet) instant yeast

  • 1 cup warm water (110°F)

  • ½ cup cottage cheese, blended smooth

  • 1 cup fresh spinach, finely chopped

  • 1 tbsp honey

  • 1 tsp salt

  • 1 tbsp olive oil

For Boiling:

  • 8 cups water

  • 1 tbsp honey or brown sugar

For Topping:

  • 1 egg, beaten (for egg wash)

  • 2 tbsp sesame seeds, poppy seeds, or everything bagel seasoning

Instructions

  • Prepare the Dough:

    • In a bowl, combine warm water, honey, and yeast. Let sit for 5 minutes until foamy.

    • Stir in cottage cheese, chopped spinach, olive oil, and salt.

    • Gradually add flour, mixing until a dough forms. Knead for about 8-10 minutes until smooth and elastic.

  • Let the Dough Rise:

    • Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

  • Shape the Flagels:

    • Divide the dough into 6-8 equal pieces.

    • Roll each piece into a ball, then flatten into a disc about ½-inch thick.

    • Use your thumb to poke a hole in the center, stretching slightly.

  • Boil the Flagels:

    • Preheat oven to 400°F (200°C).

    • Bring water and honey to a boil in a large pot.

    • Boil each flagel for 30 seconds per side, then remove and drain.

  • Bake:

    • Place boiled flagels on a parchment-lined baking sheet.

    • Brush with egg wash and sprinkle with toppings.

    • Bake for 18-22 minutes until golden brown.

  • Cool & Serve:

    • Let cool slightly before slicing and serving.

    • Enjoy with cream cheese, butter, or as a sandwich base!

Notes

For extra flavor, add garlic powder or grated Parmesan to the dough.

Store in an airtight container for up to 3 days or freeze for longer storage.

Blend cottage cheese until smooth to avoid chunks in the dough.
