Description

Healthy zucchini boats filled with ricotta, mushrooms, spinach, and garlic. A quick vegetarian recipe perfect for lunch or dinner.


Ingredients

Scale
  • 2 medium zucchini
  • 1/2 cup low-fat ricotta cheese
  • 2 cups fresh spinach or 1/4 cup thawed frozen spinach
  • 1/2 cup sliced mushrooms
  • 1 teaspoon minced garlic
  • Cooking spray
  • Optional seasonings

Instructions

  1. Slice zucchini lengthwise and scoop out the seeds.
  2. Spray a skillet with cooking spray.
  3. Cook mushrooms until softened.
  4. Add garlic and spinach and cook for several minutes.
  5. Remove from heat and stir in ricotta cheese.
  6. Fill zucchini boats with the ricotta mixture.
  7. Place in a preheated 350°F oven or air fryer.
  8. Bake for 6 to 8 minutes until tender.
  9. Serve warm.

Notes

  1. Drain frozen spinach thoroughly before using.
  2. Add Parmesan or herbs for extra flavor.
  3. Store leftovers in the refrigerator for up to 3 days.
