Description

Vibrant Spring Roll Bowls with rice noodles, fresh vegetables, protein of choice, and a creamy peanut sauce.


Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tablespoons hoisin sauce
  • 1/4 cup low-sodium soy sauce
  • 2 teaspoons minced garlic
  • 2 teaspoons Sriracha
  • 2 tablespoons rice wine vinegar
  • 3 to 4 tablespoons warm water
  • 14 ounces dry rice noodles
  • 1/2 cup chopped fresh basil
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh cilantro
  • 2 serrano peppers, chopped
  • 2/3 cup dry roasted peanuts, chopped
  • 1 avocado, sliced
  • 1 large carrot, shredded
  • 1 bell pepper, chopped
  • 1 English cucumber, sliced
  • 1 mango, sliced
  • 1/2 cup sweet chili sauce
  • 2 cups cooked chicken, shrimp, or tofu

Instructions

  1. Blend peanut sauce ingredients until smooth.
  2. Chop vegetables and herbs.
  3. Cook rice noodles and drain.
  4. Toss noodles with sweet chili and peanut sauce.
  5. Assemble bowls with noodles, toppings, and protein.
  6. Drizzle with extra sauce and serve.

Notes

  1. Store vegetables and sauce separately for make-ahead meals.
  2. Use gluten-free soy sauce if needed.
