Description

Starbucks Pumpkin Cream Cheese Muffins are a beloved fall treat featuring a moist, spiced pumpkin muffin filled with sweetened cream cheese and topped with crunchy pepitas. They combine the cozy warmth of autumn spices with a rich, creamy center. This seasonal delight is perfect for pairing with coffee or tea and makes a wonderful homemade breakfast or snack.

Ingredients

Scale
  • 1¾ cups all-purpose flour

  • 1 cup pumpkin puree

  • ½ cup granulated sugar

  • ½ cup brown sugar

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon ground cloves

For the Cream Cheese Filling:

  • 6 oz cream cheese, softened

  • 2 tablespoons sugar

  • ½ teaspoon vanilla extract

Optional Topping:

  • Pepitas (pumpkin seeds), for garnish

Instructions

  1. Prepare the Cream Cheese Filling:
In a small bowl, mix softened cream cheese, sugar, and vanilla extract until smooth. Set aside.

  2. Make the Muffin Batter:
In one bowl, whisk together flour, baking soda, baking powder, salt, and spices.
In another bowl, mix pumpkin puree, eggs, oil, granulated sugar, and brown sugar.
Slowly stir the dry ingredients into the wet mixture until just combined. Do not overmix.

  3. Assemble the Muffins:
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
Fill each liner about ¾ full with batter. Add about 1 teaspoon of the cream cheese filling on top and gently press it in.
    Sprinkle each muffin with pepitas.

  4. Bake:
Bake for 18–22 minutes or until a toothpick inserted in the muffin (not the cream cheese) comes out clean.
Cool for 10 minutes before serving.

Notes

Use room-temperature cream cheese for easier mixing.

Don’t overmix the batter—this keeps muffins tender.

For extra flavor, add a pinch of ground ginger or allspice.

Store at room temperature for 2 days or refrigerate up to 5 days.

Freeze cooled muffins for up to 2 months.
