Description

A fresh Italian-style salad made with creamy stracciatella cheese, crisp greens, sweet cherry tomatoes, crunchy croutons, and a bright olive oil lemon dressing.


Ingredients

  • 5 oz mixed salad greens
  • 12 cherry tomatoes, halved
  • 2 teaspoons finely sliced red onion
  • 1 cup bread cubes
  • 7 oz stracciatella cheese
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt, to taste

Instructions

  1. Toast the bread cubes in a skillet with a small amount of oil until golden and crisp, then let cool.
  2. Whisk together olive oil, lemon juice, Dijon mustard, honey, and salt until smooth.
  3. Arrange the salad greens on a serving plate or in a large bowl.
  4. Add cherry tomatoes and sliced red onion evenly over the greens.
  5. Sprinkle toasted croutons over the salad.
  6. Place the stracciatella cheese in the center.
  7. Drizzle the dressing evenly over the salad and cheese, then serve immediately.

Notes

  1. Season tomatoes lightly with salt before assembling for extra flavor.
  2. Burrata can be used as a substitute for stracciatella.
  3. Assemble just before serving to keep croutons crisp.
