- 8 oz cream cheese, room temperature
- 1/2 cup unsalted butter, room temperature
- 1 large egg
- 1 box strawberry cake mix (15 oz)
- 1 cup white or semi-sweet chocolate chips
- 1 cup macadamia nuts, roughly chopped
- 1/4 cup powdered sugar
- 1/8 cup Valentine’s sprinkles
Instructions
- Beat cream cheese and butter together until smooth
- Add egg and mix until combined
- Add dry strawberry cake mix and mix until a soft dough forms
- Fold in chocolate chips and macadamia nuts
- Form dough into 1-inch balls
- Roll each ball in powdered sugar, then in sprinkles
- Refrigerate dough balls for 1 hour or freeze for 15 minutes
- Preheat oven to 350°F
- Place dough balls on a parchment-lined baking sheet
- Bake for 8 to 10 minutes
- Cool on baking sheet for 2 minutes before transferring to a rack
Notes
- Chilling the dough helps the cookies keep their shape
- Do not overbake or cookies will lose softness
- White or semi-sweet chocolate both work well
