Description

Soft and colorful Strawberry Cheesecake Cookies made with cake mix, cream cheese, chocolate chips, and festive sprinkles for an easy dessert.


Ingredients

Scale
  • 8 oz cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 1 large egg
  • 1 box strawberry cake mix (15 oz)
  • 1 cup white or semi-sweet chocolate chips
  • 1 cup macadamia nuts, roughly chopped
  • 1/4 cup powdered sugar
  • 1/8 cup Valentine’s sprinkles

Instructions

  1. Beat cream cheese and butter together until smooth
  2. Add egg and mix until combined
  3. Add dry strawberry cake mix and mix until a soft dough forms
  4. Fold in chocolate chips and macadamia nuts
  5. Form dough into 1-inch balls
  6. Roll each ball in powdered sugar, then in sprinkles
  7. Refrigerate dough balls for 1 hour or freeze for 15 minutes
  8. Preheat oven to 350°F
  9. Place dough balls on a parchment-lined baking sheet
  10. Bake for 8 to 10 minutes
  11. Cool on baking sheet for 2 minutes before transferring to a rack

Notes

  1. Chilling the dough helps the cookies keep their shape
  2. Do not overbake or cookies will lose softness
  3. White or semi-sweet chocolate both work well
