Description

Creamy no-bake Strawberry Cheesecake Crunch Bites with a buttery graham cracker crust, fluffy cream cheese filling, and crisp strawberry topping. Perfect for quick desserts, parties, and freezer-friendly treats.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup crispy rice cereal
  • 1 cup Golden Oreo crumbs, optional
  • 2–3 tablespoons melted butter, optional
  • Fresh strawberry coulis, optional
  • White chocolate ganache drizzle, optional
  • Lemon glaze, optional

Instructions

  1. Mix the graham cracker crumbs, granulated sugar, and 4 tablespoons melted butter until the mixture resembles wet sand. Press evenly into 12 lined mini muffin cups.
  2. Beat the softened cream cheese, powdered sugar, and vanilla extract until completely smooth.
  3. Whip the heavy whipping cream separately until soft peaks form, then gently fold it into the cream cheese mixture.
  4. Spoon the cheesecake mixture over the prepared crusts, filling each cup about three-quarters full.
  5. Combine the crushed freeze-dried strawberries with the crispy rice cereal. Add Golden Oreo crumbs and melted butter if desired.
  6. Sprinkle the strawberry crunch mixture over each cheesecake bite.
  7. Refrigerate for at least 2 hours or until the filling feels firm and set.
  8. Serve chilled with extra strawberry crunch, fresh strawberries, strawberry coulis, white chocolate ganache, or lemon glaze if desired.

Notes

  1. Keep extra strawberry crunch topping separate until serving for the crispiest texture.
  2. Swirl a small amount of strawberry puree through the cheesecake filling before chilling for stronger strawberry flavor.
  3. Add rainbow sprinkles to the graham cracker crust for extra color.
  4. Decorate with white chocolate drizzle or mini wafer halves.
  5. Freeze the bites without their crunchy topping for a convenient make-ahead dessert.
  6. Let frozen bites soften for 10 to 15 minutes before serving, then add fresh crunch.
