Description

This Strawberry Cheesecake Stuffed French Toast is a decadent breakfast or brunch dish featuring thick slices of bread filled with a creamy cheesecake mixture and fresh strawberries. It’s golden and crispy on the outside, with a rich, sweet, and tangy filling that melts in your mouth. Perfect for special mornings, weekend brunches, or when you want to treat yourself to something delicious!

Ingredients

Scale
For the Filling:
  • 4 oz (½ block) cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ cup fresh strawberries, diced
For the French Toast:
  • 4 slices thick-cut bread (brioche or challah works best)
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tbsp granulated sugar
  • 2 tbsp unsalted butter (for cooking)
For Topping (Optional):
  • Powdered sugar
  • Maple syrup
  • Whipped cream
  • Extra fresh strawberries

Instructions

  • Prepare the Filling: In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the diced strawberries.
  • Stuff the Bread: Spread the cheesecake mixture evenly on two slices of bread, then top with the remaining slices to make two sandwiches.
  • Make the Batter: In a shallow bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar.
  • Dip the Sandwiches: Dip each stuffed sandwich into the egg mixture, coating both sides evenly. Let excess drip off.
  • Cook the French Toast: Heat butter in a skillet or griddle over medium heat. Cook the stuffed French toast for 3–4 minutes per side until golden brown and crispy.
  • Serve & Enjoy: Dust with powdered sugar, drizzle with maple syrup, and top with extra strawberries or whipped cream for an extra indulgent touch.

Notes

  • For extra crunch, coat the stuffed French toast in crushed cornflakes before cooking.
  • Substitute strawberries with blueberries or raspberries for a twist.
  • If you prefer a more custard-like texture, use heavy cream instead of milk in the batter.
