  • 8 oz cream cheese (softened)

  • 1/4 cup sugar

  • 1 tsp vanilla extract

  • 1 cup fresh strawberries, thinly sliced

  • 4 large flour tortillas

  • 2 tbsp butter (for grilling)

  • 1/2 tsp cinnamon

  • 1 tbsp sugar (for cinnamon sugar topping)


Instructions

  • Prepare the Filling

    • Soften the cream cheese by leaving it at room temperature for 10-15 minutes.

    • In a mixing bowl, combine the cream cheese, sugar, and vanilla extract. Mix until smooth using a hand mixer or whisk.

  • Add the Strawberries

    • Gently fold in the sliced strawberries, making sure they’re evenly distributed without mashing them.

  • Assemble the Cheesecakeadillas

    • Lay a tortilla flat and spread a generous amount of cheesecake filling over one side, leaving a small border around the edges.

    • Place another tortilla on top and press gently to seal.

  • Grill the Cheesecakeadillas

    • Heat a nonstick skillet over medium-high heat and add a small amount of butter.

    • Place the assembled cheesecakeadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.

    • Remove from the skillet and sprinkle with cinnamon sugar for extra sweetness.

  • Serve

    • Slice into wedges and serve immediately while still warm.

Notes

You can replace strawberries with other fruits like blueberries, raspberries, or even peaches.

For an added twist, drizzle maple syrup or honey over the top before serving.

If you prefer, you can use mascarpone cheese for a richer filling.
