Description

This Street Corn Chicken Rice Bowl combines juicy seasoned chicken, creamy Mexican-style street corn, and fluffy lime-cilantro rice in one satisfying, flavor-packed meal that’s perfect for weeknight dinners or meal prep.

Ingredients

  • Boneless skinless chicken breasts – 1½ pounds
  • Olive oil – 2 tablespoons
  • Chili powder – 2 teaspoons
  • Smoked paprika – 1 teaspoon
  • Garlic powder – 1 teaspoon
  • Ground cumin – ½ teaspoon
  • Salt – 1½ teaspoons
  • Black pepper – ½ teaspoon
  • Fresh lime juice – from 2 limes
  • Long-grain white or jasmine rice – 1½ cups (dry)
  • Water or low-sodium chicken broth – 3 cups
  • Fresh cilantro – ¼ cup, chopped
  • Corn kernels (fresh, frozen, or canned) – 3 cups
  • Butter – 1 tablespoon
  • Mayonnaise – ⅓ cup
  • Sour cream – ¼ cup
  • Cotija cheese – ½ cup, crumbled
  • Optional toppings: avocado, jalapeños, extra cotija, hot sauce

Instructions

  1. Cook the rice in water or broth with salt according to package directions.
  2. Stir lime juice and chopped cilantro into the cooked rice and set aside.
  3. Season the chicken with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice.
  4. Cook the chicken in a hot skillet or grill pan until fully cooked and golden on both sides.
  5. Let the chicken rest briefly, then slice into strips.
  6. In the same pan, melt butter and sauté the corn until lightly charred.
  7. Lower the heat and stir in mayonnaise, sour cream, chili powder, lime juice, salt, and cotija cheese.
  8. Assemble bowls with rice, sliced chicken, and creamy street corn.
  9. Add desired toppings and serve warm.

Notes

  1. For meal prep, store rice, chicken, and corn separately for best texture.
  2. Use grilled corn for extra smoky flavor.
  3. Greek yogurt can replace sour cream for a lighter option.
  4. Adjust chili powder and jalapeños to control heat level.
