Cheesy and savory stuffed bell peppers made with ground beef, brown rice, and melted cheese for an easy and healthy dinner.
Ingredients

- 2 tablespoons extra-virgin olive oil
- 1 medium onion, diced
- 2–3 garlic cloves, minced
- 1 pound lean ground beef
- 1½ cups cooked brown rice
- 14.5 ounces diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 2 teaspoons paprika
- Kosher salt and pepper, to taste
- 7 large bell peppers, tops removed and cored
- 1 cup shredded Cheddar Jack cheese
- Fresh parsley, chopped
Instructions
- Preheat oven to 375°F and place bell peppers cut-side up in a baking dish.
- Heat olive oil in a skillet and sauté onion until soft.
- Add garlic and cook briefly until fragrant.
- Add ground beef and cook until browned.
- Stir in rice, tomatoes, tomato paste, oregano, and paprika.
- Simmer until slightly thickened and season with salt and pepper.
- Stuff peppers with mixture and bake 10–12 minutes.
- Top with cheese and bake 5–7 minutes more.
- Garnish with parsley and serve.
Notes
- Use quinoa or cauliflower rice as substitutes.
- Ground turkey or chicken works well instead of beef.
- Store leftovers refrigerated up to 5 days or frozen for 3 months.
