Description

Cheesy and savory stuffed bell peppers made with ground beef, brown rice, and melted cheese for an easy and healthy dinner.


Ingredients

Scale
  • 2 tablespoons extra-virgin olive oil
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper, to taste
  • 7 large bell peppers, tops removed and cored
  • 1 cup shredded Cheddar Jack cheese
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F and place bell peppers cut-side up in a baking dish.
  2. Heat olive oil in a skillet and sauté onion until soft.
  3. Add garlic and cook briefly until fragrant.
  4. Add ground beef and cook until browned.
  5. Stir in rice, tomatoes, tomato paste, oregano, and paprika.
  6. Simmer until slightly thickened and season with salt and pepper.
  7. Stuff peppers with mixture and bake 10–12 minutes.
  8. Top with cheese and bake 5–7 minutes more.
  9. Garnish with parsley and serve.

Notes

  1. Use quinoa or cauliflower rice as substitutes.
  2. Ground turkey or chicken works well instead of beef.
  3. Store leftovers refrigerated up to 5 days or frozen for 3 months.
