Description

Comforting homemade soup with all the flavors of classic stuffed peppers, made with bell peppers, ground beef, tomatoes, herbs, and rice.


Ingredients

Scale
  • 3 tablespoons olive oil
  • 1 small yellow onion, diced
  • 1 green or red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 large tomato, diced
  • 1 pound ground beef
  • 3 cups beef stock
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 3/4 cup jasmine rice

Instructions

  1. Dice all vegetables and set aside.
  2. Heat olive oil in a Dutch oven over medium heat.
  3. Cook onion and bell peppers until softened.
  4. Add tomato and cook a few minutes.
  5. Brown ground beef and break into pieces.
  6. Stir in tomato paste and beef stock.
  7. Season and simmer for 20 minutes.
  8. Add rice and cook until tender.
  9. Serve hot.

Notes

  1. Use different bell pepper colors for variety.
  2. Cook rice separately if storing leftovers.
  3. Ground turkey can replace ground beef.
