Description

BBQ Chicken Stuffed Sweet Potatoes feature tender baked sweet potatoes topped with saucy shredded barbecue chicken for an easy, filling dinner.

Ingredients

Scale
  • 5 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 ¾ teaspoons salt, divided
  • 3 cups shredded cooked chicken
  • 1 cup barbecue sauce
  • 1 tablespoon honey
  • ½ teaspoon chili powder
  • Quick-pickled red onions (optional)
  • Mexican street corn salad (optional)
  • Fresh cilantro, finely chopped (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Poke holes all over the sweet potatoes using a fork, rub with olive oil, and sprinkle with salt.
  3. Place sweet potatoes on a lined baking sheet, cover with foil, and bake for 45–60 minutes until fork tender.
  4. Heat shredded chicken with barbecue sauce, honey, chili powder, and remaining salt in a skillet until warmed through.
  5. Split sweet potatoes, stuff with BBQ chicken, and add optional toppings before serving.

Notes

  1. Use a barbecue sauce you enjoy since it drives most of the flavor.
  2. Sweet potatoes can also be cooked in an air fryer or Instant Pot.
  3. Store chicken and potatoes separately for best leftovers.
