- 2 large eggs
- 1 cup kefir
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons sunflower oil
- Shredded cheese (optional filling)
- Cooked chicken or ham, finely chopped (optional filling)
- Sautéed mushrooms (optional filling)
- Spinach or herbs (optional filling)
- Chocolate chips, berries, or sweetened cream cheese (optional sweet filling)
Instructions
- Whisk the eggs and kefir in a mixing bowl until smooth
- Add salt and baking soda, then gradually whisk in the flour until no lumps remain
- Stir in the sunflower oil until the batter is smooth and pourable
- Preheat the waffle iron and lightly grease if needed
- Spoon a small amount of batter into the waffle iron to cover the surface
- Add a thin layer of your chosen filling on top of the batter
- Spoon additional batter over the filling to seal it
- Close the waffle iron and cook for 3 to 5 minutes until golden brown
- Remove carefully and repeat with remaining batter
Notes
- Do not overfill the waffle iron to prevent leaking
- For sweet waffles add 1 to 2 tablespoons sugar and vanilla extract to the batter
- Serve savory waffles with sour cream or yogurt sauce
- Sweet waffles pair well with honey or powdered sugar
- Reheat leftovers in a toaster for best texture
