Description

This sugar cookie cheesecake is a holiday favorite with a buttery cookie crust, creamy cheesecake, festive sprinkles, and a white chocolate ganache finish.


Ingredients

  • Crust:
  • 1 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup cane sugar
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 1/3 cup Christmas sprinkles, jimmies
  • Cookie Dough Balls:
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup cane sugar
  • 1 tsp vanilla extract
  • 5 tbsp milk
  • 1/3 cup Christmas sprinkles, jimmies
  • Cheesecake:
  • 32 oz cream cheese, room temperature
  • 2/3 cup cane sugar
  • 3/4 cup sour cream or Greek yogurt
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2/3 of the cookie dough balls
  • White Chocolate Ganache:
  • 1 cup white chocolate chips
  • 1/3 cup heavy cream

Instructions

  1. Preheat oven to 350°F. Spray a 9-inch springform pan with baking spray and line with parchment.
  2. Mix flour, baking soda, and salt for crust; set aside.
  3. Beat butter and sugar until fluffy. Add vanilla, egg, and yolk. Mix dry ingredients and sprinkles. Press into pan and bake 25–30 minutes until golden.
  4. While baking, prepare cookie dough balls: mix flour and salt. Beat butter, sugar, vanilla, and milk. Add dry ingredients and sprinkles. Roll into small balls and freeze.
  5. Preheat oven to 325°F for cheesecake. Beat cream cheese and sugar until smooth. Add sour cream, heavy cream, vanilla, and eggs. Fold in cookie dough balls.
  6. Pour filling over crust. Prepare water bath and bake for 80–90 minutes until set with slight jiggle.
  7. Cool 30 minutes in oven with door cracked. Cool fully, then refrigerate 6 hours or overnight.
  8. Make ganache: heat cream until steaming, pour over white chocolate, stir until smooth. Pour over chilled cheesecake.
  9. Freeze 10 minutes, then top with cookie dough balls and sprinkles. Slice and serve chilled.
