Description

A fresh and simple pasta made with marinated tomatoes, basil, and olive oil.


Ingredients

Scale
  • 2 pints cherry tomatoes, halved
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh basil, chopped
  • 12 ounces pasta
  • 1/2 cup Parmesan cheese

Instructions

  1. Halve tomatoes and combine with olive oil, garlic, basil, salt, pepper, and red pepper flakes
  2. Let mixture marinate for 4 hours at room temperature
  3. Cook pasta according to package instructions
  4. Drain pasta and add to tomato mixture
  5. Toss well to combine
  6. Add Parmesan cheese
  7. Serve immediately

Notes

  1. Use ripe tomatoes for best flavor
  2. Do not skip marinating time
  3. Adjust red pepper flakes to taste
